This is veganizable and just as soon an Miss M. let’s me know how to do that, I’ll share.
UPDATE: Substitute soy milk (or another non dairy alternative) for milk and 2 Tbs cornstarch plus 1 Tbs water for the egg.
CHOCOLATE CHOCOLATE CHIP MUFFINS
1 3/4 C flour
2 tsp baking powder
1/2 tsp baking soda
2 Tbsp cocoa
1 large egg
3/4 C semi-sweet chocolate chips
1 C milk
1/3 C oil plus 2 tsp
3/4 C sugar
1 tsp vanilla
Mix all ingredients well. Fill muffin tins 3/4 full and bake at 400° for 20 minutes.
