I’ve posted the ‘official’ recipe for Mexican baked eggs but I want to emphasize that baked eggs are my kind of peasant food, or as we would call it here on the Farm, country food– the sort of good food you can just throw together.
eggs and butter (or you fake-fat of choice)
open the door to your fridge
Coat the bottom and side of a mug or bowl with butter, cooking spray or other fake-fat. Add what you find. This morning it was leftover homemade meatloaf and a bit of chili sauce. It could be fried bacon, fresh or sautéed peppers and onions, ground sausage (already fried), hashbrown, fresh or dried herbs. It’s an egg dish. What do you like with eggs?
Carefully break an egg on top. Top all with buttered bread crumbs or cheese if you like.
Bake for about 20-25 minutes (depending on how you like your eggs) in a 325° oven. Note that Daughter C makes baked eggs in the toaster oven.
It’s a great dish for overnight company. Individual mugs can be baked while late risers are having morning coffee, or they can be re-heated for brunch.
