3 slices lean bacon, chopped
1 onion, sliced thin
2 Tbsp parsley, chopped fine
1 small clove garlic, crushed
8 medium stalks celery
1 C beef consommé
¼ C soft fine bread crumbs
3 Tbsp butter, melted
Preheat oven to 325o. Place bacon, onion, parsley, and garlic in a well-greased shallow baking dish, and arrange celery stalks over top. Add consommé, cover dish, and bake for about 1 hour or until celery is tender. Saute bread crumbs in butter, remove cover over celery, and sprinkle mixture over celery during the last 10 minutes of baking time.
