Tonight we are having homemade stromboli! Well, that’s a lie. It’s not entirely homemade. We’ll use a loaf of frozen bread dough rather than make bread from scratch. The stromboli dipping sauce is entirely homemade. And I bet we’ll get also have pickled pepperoncini peppers.
This sauce is very simple. I was finished with it before The Dog Whisperer was over.
Comments: Make use of the food processor to chop tomatoes; Don’t process a second time if you’re happy with the consistency.
CREATIVE COOKING TOMATO FONDUE SAUCE
2 Tbsp butter
2 Tbsp olive oil
1/2 onion chopped fine
1 1/2 cups tomatoes, chopped
1 clove garlic, minced
1 tsp dried parsley
1/2 tsp paprikka
Salt & pepper to taste
6 oz. can tomato paste.
Melt butter in saucepan, add olive oil and onions, and sauté until tender but not browned. Stir in tomatoes, garlic, parsley and paprikka, and cook until tomatoes are tender. Season with salt and pepper, add tomato paste, and cook 5 minutes longer. Puree in food processor. Cool and chill.
