CHICKEN DRUMSTICKS CACCIATORE

12 chicken drumsticks
¼ tsp salt
Freshly ground black pepper, to taste
1 Tbsp virgin olive oil
1 onion, chopped fine (about ¾ C)
1 small carrot, cut into 1/8-inch thick slices
1 small stalk celery, cut into 1/8-inch thick slices
1 large green bell pepper and 1 small red bell pepper, each seeded, deribbed, cut into ½ inch squares
5 cloves garlic, chopped fine
2 tsp fresh oregano leaves, chopped, or ¾ tsp dried leaves, crumbled
1 tsp fresh thyme or ¼ tsp dried leaves
28 oz stewed tomatoes, preferably plum, drained, chopped, juices reserved (preferably homemade—see recipes in Basics and Canning … sections—but can use canned unsalted)
½ C dry white wine
2 Tbsp parsley, chopped
Rub chicken with 1/8 tsp salt and some pepper. Heat oil over medium-high heat in a heavy-bottomed oven-proof skillet with a lid and brown drumsticks on all sides, about 12 minutes total. Transfer chicken pieces to a platter. Reduce heat to medium, add onion, carrot, celery, green pepper, red pepper, and garlic in skillet, sprinkle oregano and thyme over vegetables, and sauté, stirring, until peppers are softened, about 5 minutes.
Preheat oven to 325o. Add chopped tomatoes to skillet, raise heat to medium-high, and cook, stirring, until excess liquid evaporates, about 7 minutes. Pour in wine and reserved tomato juices, and simmer until liquid is reduced by one-third, about 10 minutes. Return drumsticks to skillet, immersing them in the liquid, and season with remaining 1/8 tsp salt and pepper to taste.
Cover skillet and braise chicken in the oven until meat is tender and clings loosely to the bones, about 30 minutes. Arrange chicken pieces on a deep platter. Place uncovered skillet over high heat, add parsley, and further reduce sauce by one-third, about 5 minutes. Spoon thickened sauce over drumsticks and serve.
