Hearty, easy meal for a chilly winter night’s supper! Serve with Scratch Green Chili Cheese Sour Cream Cornbread (easier than it sounds).
SAUSAGE AND PINTOS
1 lb link sausage (preferably homemade—see recipes in this section)
1 large onion, chopped
1 bell pepper (any color), chopped
15 oz can pinto beans, drained
8 oz tomato sauce (preferably homemade—see recipes in Basics section)
Hot corn bread (see recipes in Baked Goods section)
Fry sausages until browned on all sides. Remove and drain. Drain off all but 2 Tbsp of the fat in the skillet, and sauté onions and pepper until tender. Add remaining ingredients, stirring to blend. Simmer 10 minutes and serve hot with corn bread.
