Serve with Sausage and Pintos. Great, easy meal for a chilly weeknight.
SCRATCH GREEN CHILI CHEESE SOUR CREAM CORNBREAD
Makes 1 9-inch pan or 12 muffins
1 C cornmeal (yellow or white)
2/3 C flour
2 tsp baking powder
1 Tbsp sugar
½ tsp salt
¾ C sour cream
2 eggs, beaten
¼ C vegetable oil
1 ½ C shredded cheese
8 ¾ oz can whole corn kernels, drained
4 oz can chopped green chilies, drained
Preheat oven to 400o. Grease 9-inch square pan or muffin tins. Combine cornmeal, flour, baking powder, sugar, and salt, mixing well. Combine sour cream, eggs, and oil in large mixing bowl, mixing well. Stir in dry ingredients, cheese, corn, and chilies, mixing well and pouring into prepared pan. Bake 30-35 minutes or until toothpick inserted in center comes out clean. Cool 10-15 minutes and serve warm.
