BROCCOLI OR ASPARAGUS EN CASSEROLE
1 lb broccoli or asparagus, cooked and drained
1 C milk
4 hard-boiled eggs, chopped fine
10 saltine crackers, crushed fine into crumbs
2 Tbsp butter, cut into pieces, plus more for greasing baking dish
Creole seasoning, to taste
1 C shredded cheese (your favorite kind)
Preheat oven to 325o. Cut asparagus into small pieces. Alternate layers of asparagus, chopped egg, cracker crumbs, and seasoning in a buttered casserole, reserving enough cracker crumbs to cover top of dish. Pour milk over all, dot with 2 Tbsp butter, and bake uncovered 1 hour. Top with cheese during last 15 minutes of baking time.
