Recipe: Pork Chops Simmered with Spices and Kohlrabi

Served with Fredericksburg Potatoes and Sauerkraut II. We didn’t have kohlrabi. ;-(

PORK CHOPS SIMMERED WITH SPICES AND KOHLRABI

1 ½ to 2 lbs lean pork chops, pounded, salted and peppered to taste
1 Tbsp butter, plus an additional 1 Tbsp
Water or soup stock (the latter preferably homemade)
4 whole black peppercorns
4 whole allspice
1 Tbsp flour
6 or 7 young kohlrabi, sliced thin, simmered on butter

Melt 1 Tbsp butter in a deep skillet and sear chops on both sides. Add water or soup stock, peppercorns, and allspice, and simmer covered for about 45 minutes. Meanwhile, make a light brown flour out of additional 1 Tbsp butter and flour, add a little liquid, and cook until thickened slightly. Add mixture to meat when tender. Place meat on a platter, decorate with kohlrabi slices, and serve gravy in a gravy bowl.
