Here’s the story. As you know the NCAA National Football Championship Game was last evening. Kickoff 7:30 central. My timing on Marica Cooks Monday had to be impeccable.

I had reviewed the recipe many many times. It’s very easy but I didn’t want any unnecessary wait time. I already had
the onions simmering in butter. And yes, that is a non-nonstick pan. You can’t scrape all of that good stuff off the bottom of a nonstick pan.
I had the soup mugs out (two for supper, two for today’s lunch),
and, for four servings of soup, 6 cups of Basic Brown Soup Stock heating up.
the onions were perfect,
and the stock was simmering.
I had combined the onions, stock, dash of dry sherry, pinch of kosher salt and a bit of grated parmesan cheese in the mugs, topped each with a slice of toasted homemade honey wheat bread and a slice of Swiss, and popped the mugs under the broiler in the toaster oven.
we were ready to park ourselves in front of the television and enjoy Paul Finebaum’s pre-game show.
