FRIED SWEET POTATOES
Large Louisiana yams, peeled and cut into ½ inch thick slices
Cold salted water (to cover cut potatoes)
Melted butter mixed with sugar or brown sugar, to taste
Soak cut potatoes in cold salted water to cover for at least 1 hour, then drain and dry. Preheat oven to 325o. Place slices on a lightly greased baking sheet (don’t overlap) and bake until browned and tender, brushing with butter-sugar mixture and turning at intervals.
