Take a good look at that photo. Note that neither the noodles nor the crackers are homemade– though one can make homemade noodles and crackers. Somewhere here on the blog is Miss M’s recipe for homemade water crackers, and I’m pretty sure there are photos of making homemade noodles. That’s not the point.
The point is you can make a really really good Spring Time Chicken Noodle Soup for next to nothing $$ wise.
It’s Peasant Food. Embrace it.
This particular soup started with boiling three bone-in chicken breasts in about 4-6 cups of water for about one hour.
And then Daughter C and I had things to do.
I let the breasts cool in the stock while we were doing those things.
The most important thing we did was go to K-Roger in S-Vegas and pick out veggies for homemade chicken noodle soup.
1 handful of peas in their pods (looking at you, C)
1 bunch of green onions
I picked 3 stalks of celery from the garden, and a handful of cilantro.
Buy Saltine crackers to accompany the soup.
It was good.
