Fried Noodle Rings
- 2 cups fine dry noodles
- 1 tsp salt
- Crisco for deep frying
- Place noodles in boiling salted water. Cook until tender. Drain but do not wash the noodles. Place in greased individual ring molds. Chill until firm.
- Remove rings from molds. Fry in deep Crisco heated to 365 (or when an inch cube of bread browns in 60 seconds) 2 to 3 minute. (If Crisco is too hot, the cold ring will separate.) Drain on absorbent paper. Place in oven to reheat just before serving.

A square inch of ordinary 2019 sandwich bread is probably going to burn in 60 seconds. It’s 1949. She’s wearing a dress and an apron. No doubt she bakes her own bread.
Absorbent paper. There are no paper towels. But she probably has a roll of the same sort of paper that paper bags used to be made from (100% not from recycled material). Or butcher paper.
Unfortunately, the pages with the recipes for Seafood Neptune, and for Creamed Chicken are missing. It’s a
crappy old paperback book. But the authentic 1949 recipe for Chow Mein remains! Coming up shortly.
