That was back in the days when we did one (1) tailgate a year. For those, all we did was one main dish. It was a lot easier to get onto campus on Game Days back then and folks brought sides.
That was then and this is now.

Mr. Big Food has a nice relationship with Billy, the seafood guy at the grocery, and Larry, the meat guy. Billy seasoned and steamed the shrimp. Looks amazing.
This is a cold food tailgate, so we got out pretty cheap. Only two carts’ worth of stuff. About $350 to feed 120 people. That’s $2.90 per serving.
After we returned home from shopping, Mr. Big Food made the brine for Dixie’s Pickled Eggs, and hard boiled four dozen eggs. Dixie needs three dozen. Corned Beef Salad needs another dozen. Artichoke Squares need another dozen raw.
My favorite part of tailgate cooking is laying everything out on the bar in the Bunkhouse.
I remember when we had a wringer washer…. it was somewhere between 1943 and 1948. We moved in ’48, and I remember that in the “new” house (military housing) we had a “modern” washing machine. I also had an interesting one in Germany…something like a 5 gallon tub with a top that had a washer part attached on the bottom. Put it in the bath tub, fill with water, put in soap, add the top and turn on. It worked for diapers. We had washing machines over at the base, (we were in German civilian housing), but I only got the car 1 day a week…and you can’t wait that long for diapers! Don’t think there was anything for wringing them out…I think I just used arm power – but can’t say I really remember! We don’t really have a problem with power loss in Southern Ca. If we do, it’s due to fires or winds – which are often the cause of fires. Or car accidents. We did when we lived in Virginia…there were actual trees there, and we were almost guaranteed to have a 1 to 3 day power outage some time in either the spring or fall when tree limbs or trees fall on the lines. But…no diapers when we lived there…so 1-3 days wasn’t a problem. Biggest problem was the septic field. We had a septic tank with a pump (electric) that pumped the waste up to the top of the hill behind us, which then allowed the fluid to flow through pipes with dispersal holes down the hill. Lose power, and no uphill pump. Not good. I’ll never have a down hill septic field again. At least…not one that has a “pump up to the top first” requirement!

Cannot image a septic tank requiring power. Strange, man. Also don’t understand why folks with wells don’t have the old timey option to pull up a bucket, but then again, I’ve never had a well.
