We dined at the dining room table last evening. We took great care to be sure we did not get red wine or steak sauce on Gran’s old linen tablecloth. 🙂
I am not ashamed to mention also that we used the “fancy” napkins pulled from the paper towel roll.
This weekend of grilling is going great! (Friday’s Pollo Verde recipe.) The fillets were extra-ordinary. As were the potatoes. And the weather is fabulous. Hope you, too, are enjoying life.
BLEU CHEESE BACON POTATOES
Serves 4
4 medium potatoes, scrubbed, baked until done, then each halved lengthwise, insides scooped out to leave shell, insides mashed
½ C sour cream
1 oz blue cheese
¼ C milk
½ stick butter
¾ tsp salt
Pepper to taste
4 slices bacon, fried crisp
Preheat oven to 350o. Combine mashed potatoes with sour cream, blue cheese, milk, butter, salt, pepper, and crumbled bacon, and put mixture back into potato shells. Bake 10 minutes.
