Recipe: Broiler Meal of Sausage, Apples, Corn, and Sweet Potatoes

The concept of a broiler meal is amazing. Things go in the broiler pan, things go on the broiler rack, all the things are broiled and then you eat. This recipe has a bit of prep in that you have to cook the corn. I also used fresh sweet potatoes so I baked them in the toaster oven. But other than the apples (which I didn’t want to oxidize) it’s all put together and sitting in the fridge.

We’ve had this before and I will share with you what happens. That little melted butter and cinnamon and brow sugar glaze you put on the apples drips through the pan and onto the sweet potatoes and corn. I’m talking delicious.

BROILER MEAL OF SAUSAGE, APPLES, AND CORN AND SWEET POTATOES

Serves 4

Preheat broiler. Prepare broiler pan and rack, and broil, as directed.

CORN AND SWEET POTATOES

2 C whole corn kernels, cooked and drained
29 oz can sweet potatoes in syrup, drained
Salt and pepper OR Creole seasoning, to taste
2 Tbsp butter

Line broiler pan with foil. Spread corn down one side of broiler pan and sweet potatoes down the other. Season with salt and pepper OR Creole seasoning and dot with butter. Prepare sausage and apple slices.

SAUSAGE AND APPLE SLICES

1 lb fully-cooked sausage link (any flavor or variety)
1 cooking apple, cored and cut into ½ inch slices
2 Tbsp butter, melted
2 Tbsp brown sugar
1 tsp cinnamon

Place sausage link in center of broiler rack and place rack over broiler pan. Combine melted butter, brown sugar, and cinnamon, mixing well, and brush apple slices on both sides. Place apple slices on broiler rack with sausage link. Broil 5 inches from broiler for 6-8 minutes. Turn sausage and broil 6-8 minutes longer, taking care not to burn apple slices. Cut sausage link into serving pieces and serve sausage and apple slices with corn and sweet potatoes.
