Recipe: Cottage Cheese Apple Pie

COTTAGE CHEESE APPLE PIE

Makes 1 deep 9-inch pie

  • ½ recipe Plain Pastry (lining a pie plate)
  • 1 ½ C apples (sliced thin)
  • 2 eggs
  • ½ C cottage cheese
  • ¾ C sugar (or less, to taste)
  • ½ C cream
  • 1/8 tsp salt
  • 1 tsp grated lemon rind
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  1. Preheat oven to 425o. Cover bottom of pie shell with apple slices. Beat eggs slightly, and add cottage cheese, ½ C sugar, cream, salt, and lemon rind. Mix remaining ¼ C sugar with cinnamon and nutmeg, and sprinkle mixture over apples. Cover apples with egg-cheese mixture and bake 10 minutes. Reduce oven temperature to 350o and bake 30 minutes longer.
