Recipe: Roasted Whole Onions

If you have enough left over, either the Whole Onions (below) or the Roasted Onion Flowers [see recipe in this section] can be used to make the delicious Roasted Onion Soup with Cannellini Beans. WHOLE ONIONS

“Whole onions vary in size and color. Large onions up to fourteen ounces each can be roasted successfully. Whole onions can be peeled or not before cooking.”

Serves 4 as a side dish

1 ½ lbs onions (4, about 6 oz each)
2 to 3 Tbsp fat

Place rack in center of oven and preheat oven to 500˚. Place onions in smallest pan that will hold them comfortably. Slick onion and pan with fat. Roast large onions (up to 14 oz each) 45 minutes, medium onions (up to 10 oz each) 40 minutes, and smaller onions (from 4 to 6 oz each) 30 minutes, turning onions halfway through cooking time.
