Recipe: New Orleans Creole Christmas Egg-Nogg

NEW ORLEANS CREOLE CHRISTMAS EGG-NOGG

“Take as many eggs as there are people to serve; break and separate, putting the yolks into a large bowl. Divide the whites, putting them into several platters so that the guests will have something to do. Let someone with a strong wrist and a big spoon stir the yolks while another adds the sugar, little by little, one tablespoon to each egg. Beat till the sugar is dissolved and the mixture smooth. At this moment the host usually steps forward with the brandy or whiskey or whatever it is to be. If he is a careful man he will put in a tablespoon of liquor for each egg and one for the bowl—otherwise he will put in twice that and it will be too much, I think. By this time the egg whites should have been beaten with forks, after adding a tiny pinch of salt, until they are so stiff they will not spill if the plate is turned upside down; these are now stirred into the bowl and you have a strictly old-fashioned nogg.

“This is my preference of all: Mix yolks of six eggs, 1/3 cup sugar, ½ pint brandy. 1 pint rich cream. Add the beaten whites, sprinkle with nutmeg and serve.”
