Recipe: Peach, Grape and Ginger Ale Mold

PEACH, GRAPE AND GINGER ALE MOLD

3 oz package orange flavored jell-o, dissolved in 1 C boiling water
1 C ginger ale, mixed with 1 Tbsp lemon juice and ½ tsp grated orange rind
Fresh peaches, peeled, sliced
Green seedless grapes
Crisp lettuce
Fresh strawberries, washed, hulled
Cream Mayonnaise Dressing

Stir ginger ale mixture into gelatin mixture. Pour a little of the gelatin mixture into a lightly oiled ring mold, arrange fresh peach slices in bottom of mold, and place in refrigerator to set. Add gelatin mixture and grapes, and let set. Repeat layering with peaches, grapes, and gelatin mixture until mold is filled. Chill thoroughly. Unmold onto a large round cold platter over a bed of lettuce. Fill center with strawberries and serve with Dressing.

CREAM MAYONNAISE DRESSING

2½ Tbsp mayonnaise
1/3 C sour cream
Salt, sugar, to taste
A few sliced fresh strawberries or drained frozen ones (optional)

Blend together mayonnaise, sour cream, and salt and sugar. “A few sliced fresh strawberries (or drained frozen ones) may be added for color.”
