Recipe: Ginger Fruit Molds

More Summer Jell-O Salads


Serves 10

Pineapple juice (from drained pineapple tidbits, below), plus enough water to make 1 ¼ C liquid
2 3-oz packages lemon jell-o
1 ½ C ginger ale
8 oz can pineapple tidbits, drained (juice reserved for liquid, above)
½ C chopped pecans
1 banana, sliced, coated lightly with lemon juice
1 can seedless green grapes
1 can Mandarin oranges, drained
2 Tbsp minced candied ginger

Heat juice-water liquid to boiling, and dissolve jell-o in hot mixture. Cool to room temperature, add remaining ingredients except lettuce, turn into molds, and chill until firm. Unmold onto lettuce.
