We had this once!

I am not going to lie and tell you I remember this meal. But it certainly looks like the sort I’d have enjoyed.

OVEN MEAL OF PORK CHOPS, SWEET POTATO, LIMAS AND CORN, AND CREAM PUFFS

Serves 6

Preheat oven to 350˚. Prepare all dishes and bake together 1 hour.

ORANGE PORK CHOPS

6 pork chops
Melted fat (for browning chops)
1 tsp salt
1 ½ tsp ground ginger
1 tsp Italian seasoning
1 tsp poultry seasoning
6 onion slices, peeled
2 Tbsp brown sugar
1 can frozen orange juice concentrate
2/3 C water
1 Tbsp lemon juice

Brown chops in a small amount of fat. Remove chops to a casserole dish. Mix together seasonings and sprinkle over browned chops. Place one onion slice over each chop. Combine sugar, orange juice concentrate, water, and lemon juice, mixing well. Pour over chops. Bake covered.

SWEET POTATO PUFF

3 C cooked and mashed sweet potatoes
Hot milk (to moisten mashed sweet potatoes)
2 eggs, separated, whites beaten stiff
2 Tbsp butter, melted
Salt, pepper to taste

Mix together sweet potatoes, milk, egg yolks, butter, and salt and pepper. Fold in egg whites. Pile lightly into a greased casserole. Bake uncovered.

STEAMED LIMAS AND CORN

10 oz package frozen baby limas
10 oz package frozen corn
½ C water
½ tsp salt
2 Tbsp butter

Place limas and corn in a 2 quart casserole. Sprinkle with water and salt and dot with butter. Bake covered.

CREAM PUFFS

½ C butter
1 C water
1 C flour
4 eggs
Sweetened whipped cream, ice cream, or custard (for stuffing cream puffs)

Combine butter and water in saucepan and cook over high heat. When mixture boils, stir in flour and cook until thickened, stirring constantly. When mixture gathers into a mass, remove from heat and cool slightly. Add eggs, one at a time, mixing thoroughly after each addition. Drop by tablespoonfuls about 2 inches apart on greased cookie sheet. Bake; let stand in oven after oven is turned off about 10 minutes (to dry out puffs). Remove from oven and make small slits in bottom of puffs to released steam. Cool on cake rack. Fill with desired filling and serve.
