OVEN MEAL OF CHICKEN CASSEROLE, SPINACH LOAF, AND BROWN BETTY

Serves 4

Preheat oven to 350˚. Prepare all dishes and bake 40-50 minutes.

CHICKEN BROCCOLI CASSEROLE

10 ½ oz can cream of chicken soup
½ C mayonnaise
½ tsp lemon juice
¼ tsp curry powder
10 oz box frozen broccoli, thawed
2 C cooked sliced chicken
1 C bread cubes, toasted
¼ C butter, melted

Combine soup, mayonnaise, lemon juice, and curry powder. Place thawed chopped broccoli into bottom of a greased 1 ½ quart casserole, top with chicken, and pour sauce over all. Mix bread cubes with melted butter and top casserole with cubes. Bake uncovered.

SPINACH LOAF

10 oz box frozen chopped spinach, cooked according to package directions and drained thoroughly
¼ C butter
3 Tbsp flour
2 C milk
3 eggs
2 tsp salt

Melt butter in saucepan over medium heat. Stir in flour and cook 1 minute. Stir in milk and cook, stirring constantly, until mixture has thickened. Beat eggs with electric mixer. Beat in salt and about 1 Tbsp of hot sauce. Beat in remaining sauce. Fold in spinach and pour into a greased 8×8 inch baking dish. Bake uncovered 40 minutes or until center is completely set.

BROWN BETTY

2 C bread cubes, toasted
5 C pared apples or pears, sliced
½ C sugar
¼ tsp cinnamon
¼ tsp salt
3 Tbsp lemon juice
¼ C water
2 Tbsp butter
Light whipping cream

Put 1/3 of bread cubes into bottom of greased 2 quart baking dish or casserole. Cover with half of the apple or pear slices. Mix together sugar, cinnamon, and salt, and sprinkle half of mixture over fruit. Add another layer of half of remaining crumbs, then fruit slices, then remaining sugar mixture. Top with remaining crumbs. Sprinkle lemon juice and water over all and dot with butter. Bake covered for 40 minutes; uncover and bake 10 minutes longer. Serve warm with whipped cream.
