CHICKEN WINGS I

Makes 4 dozen

Ingredients

  • 24 chicken wings each separated into sections, wing tips discarded (48 sections)
  • 6 Tbsp butter melted
  • 10-11 oz Italian-style bread crumbs preferably homemade—see recipes in Basics section
  • ¾ C shredded Parmesan cheese
  • 3 Tbsp chopped parsley
  • 3 tsp garlic salt
  • 1 ½ tsp pepper
  • ¼ to ½ tsp cayenne pepper

Instructions

  • Preheat oven to 350o. Dip wing pieces in melted butter. Roll in mixture of bread crumbs, cheese, parsley, garlic salt, pepper, and cayenne pepper, coating well, and arrange wing pieces in oblong baking pan. Pour remaining butter over chicken, and bake about 40 minutes or until wings are tender, not turning wings. Baste wings often with drippings while baking. Serve hot.
