SAUSAGE SAUERKRAUT SOUP
smoked Polish sausage link
chopped (preferably homemade—see recipes in Meats section)
pared and cut into ½ inch cubes (about ¾ C)
peeled and cut into ½ inch cubes (about ½ C)
can condensed cream of mushroom soup
rinsed and drained
freshly ground black pepper
preferably homemade—see recipes in Basics section
In (at least a 3 ½ quart) slow cooker, combine all ingredients in order listed, stirring to mix well. Cover and cook on low heat setting for 10-12 hours, or on high heat setting for 4 ½ -5 ½ hours.
Whatever you do-- DO NOT stir well! It's much better if you have to "dig all the way to the bottom" to appreciate this soup's layers!
